If you are flooded with people who are (allegedly) sitting there all day on a single cup of coffee, then simply tell them to get out or drink more coffee. If you need a technical solution - offer a 2 hour access voucher with each purchase over a minimal value.
On the ambiance issue though - I have never understood that one. What really is the difference between a person buried behind a newspaper or one buried behind a laptop?

I think people who read the newspaper are more likely to read while discussing, or at least use the news as a source of conversation. However, farmville is too engrossing to double as a social activity, and isn't useful convo-material. That's my hypothesis anyways.

I call BS on that first sentence. It's the person, not the medium. I've made a lot of friends, job contacts, and even dates while working at the coffeehouse. Meanwhile there is somebody in the corner who has been reading the same book for 2 hours on one cup of coffee, doesn't talk to anyone, and somehow, she's the saint and the laptop people are the antisocial sales killers...
